Nick began his Cowboy Star journey as a butcher, and it quickly became clear that his passion and experience would take him beyond the butcher’s block. Before joining us, he spent years in the kitchens of Maine, working in some of the region’s most respected seafood houses where he developed a deep appreciation for ingredient-driven cooking and the importance of relationships with local farmers, ranchers, and fishmongers. Now raising his family in Colorado Springs, Nick brings that same dedication to craftsmanship and uncompromising quality to Cowboy Star every day. When he’s not leading his team in our kitchen, you’ll find him in his own… cooking for family and friends with the same heart and skill that define his work.
